Choosing the right professional equipment calls for a solid understanding of thermodynamics, the spatial ergonomics behind the counter, and consumer buying behaviour.

With so many options on the market for hospitality professionals (cafés, hotels, restaurants), this technical guide details the essential mechanical and structural criteria to consider. From a sensory standpoint, mastering temperature is a demanding science. Serving a craft beer, a dry white wine or a soda requires absolute thermal precision, generally between 2°C and 8°C. A drink served at the wrong temperature alters the perception of aromas and the structure of carbonation, causing immediate dissatisfaction for the customer. Mechanically speaking, the load-bearing strength of these shelves is crucial. A full row of glass bottles represents considerable weight. It’s advisable to make sure the shelves, often coated or made of steel, are designed to support several dozen kilos without bending, while still keeping a slotted structure that allows fan-assisted cold air to circulate.

The commercial refrigeration industry has fully embraced LED technology for its physical properties.
