The IceLab horizontal ice churners were specially designed for producing small to medium volumes of artisanal ice cream and innovative cocktails. Thanks to their advanced cooling system and specially designed agitators, they increase the ice cream’s volume (OVERRUN) while guaranteeing a smooth, homogeneous texture.
Easy to use, sturdy and requiring little maintenance, they are perfect for a variety of establishments such as restaurants, bars, ice cream parlours, pastry shops and culinary research labs.
They allow you to produce a wide variety of preparations:
White-base and custard-base ice creams, sorbets & semi-sorbets
Deconstructed and frosted cocktails
Culinary and mixology experiments
Experiment with new textures and flavours!
IceLab also lets you work cocktails in an entirely new way, creating innovative textures such as:
Ultra-fine granitas for frosted cocktails.
Alcoholic ice creams for surprising tastings.
Foamy, airy cocktails thanks to the cold and the ice cream’s structure.
Layering effects for artistic, gastronomic drinks.
