GN pans (Gastronorm) and professional food containers are must-haves in the world of catering, snacking, professional kitchens and bars. At CocktailBar, we offer a complete selection of GN pans in stainless steel and food-grade polypropylene, with or without lids, in various depths, sizes and formats suited to every professional requirement.
What is a GN pan?
A GN pan, short for Gastronorm, is a container with standardized dimensions used in catering and hospitality for storing, preparing, transporting and displaying food. They come in GN 1/1, GN 1/2, GN 1/3, GN 2/3, GN 1/4, GN 1/6, GN 1/9 formats, and more. This standardization ensures perfect compatibility with professional equipment such as trolleys, cold tables, ingredient bins, bar stations, buffets, ovens, bain-maries and refrigerators.
Why use GN pans in a bar?
In the world of professional bars, GN pans are essential for organizing ingredients, saving prep time, and ensuring smooth service. They’re used to store lemon wedges, cocktail garnishes, freshly cut fruit, herbs, spices, as well as homemade syrups and ready-to-use preparations.
They fit perfectly into modular bar stations, bar caddies, or simply on a prep counter. Stackable, impact-resistant and easy to clean, they optimize space while guaranteeing spotless hygiene.
Using GN pans in the kitchen
In the kitchen, GN pans are incredibly versatile. They’re used to prepare, store, cook and serve food. Whether keeping sauces on hand, setting up mise en place, holding food warm in a bain-marie, or storing raw ingredients cold, the GN pan is an essential ally for chefs, caterers, pastry chefs and restaurateurs.
Stainless steel GN pans are perfect for oven cooking, holding temperature, or intensive use in hot environments. Food-grade plastic GN pans are ideal for cold storage, storing dry goods, and prepping salads, sandwiches or poke bowls.
A wide range for every professional need
Our selection includes gastronorm pans suited to every need:
-
Stainless steel GN 1/1 pans for cooking or service
Plastic GN 1/9 pans for topping bars
Airtight lids for optimal preservation
Stackable containers with handles for easier transport

Every model is designed for intensive use, dishwasher-safe, compliant with HACCP standards, BPA-free and resistant to temperature changes. Some pans withstand temperatures from -40°C to +110°C, making them suitable for both freezer and bain-marie use.
Ideal for cocktail bars, coffee shops and juice bars
Whether you’re a bartender, barista or juice bar manager, GN pans help you keep all your ingredients organized and within reach. Perfect for prepping mojito fruit, homemade syrups, infusions, zests, or smoothie bowl toppings. Staying organized is key to saving time during service and delivering consistent results.

What GN size should I choose for a bar setup?
Start with the GN 1/1 (530 x 325 mm) as your reference, then divide down. For garnishes, citrus wheels and cherries behind the bar, GN 1/6 (176 x 162 mm) and GN 1/9 pans fit standard rail wells without wasting space. Depth matters more than footprint: 65 mm handles most prep, 100 mm suits ice or bulk fruit.
What is the difference between stainless steel and polycarbonate GN containers?
Stainless steel GN pans handle heat, go from bain-marie to blast chiller and resist scratching, which is why kitchens use them for service. Polycarbonate is clear, lighter and lets you see stock levels at a glance, but it warps above roughly 99°C. For cold bar storage, polycarbonate wins; for anything hot or heavily used, steel.
How do I clean and maintain gastronorm pans?
Most stainless and polycarbonate GN pans are dishwasher safe up to around 90°C. Avoid steel wool and chlorine-based cleaners: they pit the surface and leave rust spots on stainless. Soak dried residue rather than scraping. Check lid gaskets monthly and replace them once they stiffen, since a poor seal is what causes leaks during transport.
Who actually needs GN containers rather than regular storage boxes?
Anyone working with standard counters and fridges. Gastronorm sizing is a fixed standard, so pans drop into prep tables, refrigerated rails and holding cabinets without adapters. Bars, caterers, food trucks and serious home cooks with a modular setup benefit most. If you only store leftovers in a domestic fridge, ordinary containers are cheaper and just as effective.
